PINEAPPLE-MANGO RUM CHICKEN (Daisy Style) by Miss Daisy4 boneless chicken breasts1/2 onion, diced1 green pepper, minced2 cloves of garlic, diceda pinch of salt and pepper2 Tbsp. soy sauce1/4 c. vegetable oil1 jigger coconut rum1/2 c. diced fresh pineapple1/2 c. diced fresh mango1/4 c. pineapple juiceGrill chicken breast and simmer in pineapple saute for 2 minutes. Serve over your favorite rice. Saute onion, green pepper, garlic, salt, pepper, and soy sauce in vegetable oil. Flambe rum (take saute pan away from flame). Add diced pineapple, mango, and pineapple juice. Makes enough to serve 4.
