Chicken Panini
2 tbsp. mayonnaise
1 tsp. mustard
1/2 tsp. dried basil
2 slices of bread of your choice
3 oz. sliced cooked chicken breast
4 slices tomato
sprinkle of salt and pepper
1/2 cup baby spinach leaves
thinly sliced cheddar cheese to cover sandwich

Spray grill well with cooking spray.
Heat to medium-high. Mix first three ingredients and spread on one side of each slice of bread.
Place chicken, tomato, salt, pepper, spinach and cheese on one slice of bread.
Cover with second slice, spread side down.
Cook on griddle 4 to 4 minutes or until golden brown and cheese has melted.
