SWEET POTATO PIE RECIPE FOR TODAY

SWEET POTATO PIE 
(makes 1)

Ingredients:
2 Cups mashed sweet potatoes
1/2 Cup softened butter
1 Cup sugar
1/2 Cup milk
2 eggs
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp vanilla extract
1 - 9" unbaked pie shell

Directions:
Beat butter into mashed sweet potatoes. Stir in remaining ingredients until well mixed. Using a mixer, beat until smooth.
Pour into pie shell.
Bake at 350 degrees for 55-60 minutes or until set
