4 carrots, sliced
1 stalk celery, chopped
1 onion, chopped
Parsley, chopped
Directions
1. Mix flour, salt, and pepper. Thoroughly coat the meat with mixture and place in the slow cooker. You can do this in the slow cooker to save yourself a dish to wash.
2. Add remaining ingredients, and stir to mix well.
3. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
4. Garnish with parsley. Serve in a bowl with a piece of garlic bread on the side to dunk. This lets you soak up that incredible slow cooked broth.
Pro tip: To add some sweetness to this dish, and cut some of that richness, we suggest caramelizing your onions beforehand. Cook them low and slow until clear, then golden, then a brown with golden specs. Sprinkle with a pinch of sugar when they're golden to enhance the caramelization.
You can also add some grilled peppers to also add a hint of sweetness to this dish, and add a twist to the classic recipe.
