Ingredients
1/2 cup butter, melted
2 eggs, beaten
1 (15 ounce) can whole kernel corn, drained
1 (8.5 ounce) package dry corn bread mix
1 (14.75 ounce) can creamed corn
1 cup sour cream

Directions
Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
Bake for 45 minutes in the preheated oven, or until the top is golden brown.

BBQ Turkey Flatbread Pizza

Ingredients

4 (8-inch) flatbreads or naan bread,  about 8 inches diameter
3 tablespoons Land O Lakes® Butter
1 large (2 cups) red onion, cut into thin slices, separated
1/2 cup whole berry cranberry sauce
1/2 cup barbecue sauce
2 cups chopped cooked turkey or chicken
8 (3/4-ounce) slices Land O Lakes® Deli American cut diagonally into quarters
2 tablespoons chopped fresh chives

How to make

  1. STEP 1
    Heat oven to 400°F.
  2. STEP 2
    Place flatbreads onto baking sheets. Bake 5-6 minutes or until slightly crisp.
  3. STEP 3
    Melt butter over medium heat in 2-quart nonstick saucepan until sizzling; add onion. Continue cooking, stirring occasionally, 8-10 minutes or until onions are browned and caramelized. Remove from pan.
  4. STEP 4
    Combine cranberry sauce and barbecue sauce in same pan. Cook over low heat until heated through.
  5. STEP 5
    Spread barbecue sauce mixture over flatbreads. Top with caramelized onion, turkey and cheese. Bake 8-10 minutes or until cheese is melted and crust is crisp. Sprinkle with chives.

HAM AND BROCCOLI CASSEROLE RECIPE FOR TODAY

HAM AND BROCCOLI CASSEROLE

Ingredients
8 oz pre-cooked ham , diced or cubed
2 cups of raw broccoli florets (about 2/3 of a head of uncooked broccoli)
1 16 oz box Rotini Pasta
2 10 oz containers of refrigerated Alfredo sauce (I use Bertolli)
1 cup sour cream
1 15 oz container ricotta cheese
1 tsp garlic powder
1/2 tsp onion powder
1/3 cup Parmesan cheese , grated
4 tbl fresh chives , diced
1/2 tsp salt
1/4 tsp pepper
3 cups Mozzarella cheese , fresh shredded

Instructions
Boil Rotini pasta in a large pot of salted water, according to the box directions.
Drain water, return pasta to pot and then set aside.
Add all of the remaining ingredients, except for 2 cups of the mozzarella cheese into a large bowl.
Stir everything together.
Add your pasta to the sauce and stir to combine.
Pour mixture into a greased 9×13 baking dish.
Sprinkle the top evenly with the remaining mozzarella cheese.
Bake at 350 degrees for 30 minutes, or until top is just starting to brown.

Spaghetti Squash Chow Mein RECIPE FOR TODAY

Spaghetti Squash Chow Mein

Ingredients
1 large spaghetti squash
1/4 cup COCONUT AMINOS (or tamari if not paleo or just use SOY SAUCE) 
3 cloves garlic, minced
1 tablespoon COCONUT SUGAR or use light or dark brown sugar
2 teaspoons freshly grated ginger
1/4 teaspoon white pepper (or black pepper!)
2 tablespoons OLIVE OIL
1 onion, diced
3 stalks celery, sliced diagonally
2 cups cole slaw mix (shredded cabbage and carrots)

Instructions
Cut a spaghetti squash in half length wise and scoop out seeds. Lay skin side up in a 13 x 9 pyrex and pour 1/2 inch of water in the bottom of the pan. Bake at 400 degrees for 30-40 minutes, until flesh is very tender. Once done, scoop out flesh with a fork so it breaks apart into strings, set aside.
In a small bowl, whisk together coconut aminos, garlic, coconut sugar, ginger and white pepper; set aside.
Heat olive oil in a large skillet over medium high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes. Stir in cabbage until heated through, about 1 minute.
Stir in spaghetti squash and sauce mixture until well combined, about 2 minutes.
Serve immediately.

Note: here is the substitute for Coconut Sugar. You can substitute equal amounts of light or dark brown sugar (measured unpacked) for a similar flavor but it does not have the same low-glycemic properties.

Ingredients
  1. 1 Joseph's Reduced Carb Lavash Bread or flatbread
  2. 2 large tablespoons Cucina Toscana Artichoke Bruschetta Spread - you can substitute with a sugar-free pizza sauce
  3. 1/3 cup shredded part-skim mozzarella cheese
  4. 8-10 slices turkey pepperoni
  5. additional veggie toppings can include: onions, bell peppers, mushrooms, olives, ect.
  6. coconut or other non trans fat cooking spray

Instructions
  1. THM flatbread pizza
  2. Heat oven to 400 degrees.
  3. If you're including additional veggies like bell peppers and mushrooms it's a good idea to cook them before adding to your pizza. These vegetables have a lot of water and it's best to cook it out beforehand to avoid a watery, soggy pizza. Simply cook diced peppers and mushrooms with a spritz of oil for a minute or two over high heat to reduce the water content.
  4. While the veggies are cooking, lightly spray a baking sheet with coconut oil or other non trans fat spray. Place flatbread onto baking sheet.
  5. Spread sauce onto flatbread.
  6. Add shredded mozzarella cheese.
  7. And top with turkey pepperoni and any other vegetable toppings you'd like.
  8. Bake at 400 degrees for 8-10 minutes, just long enough for the cheese to melt.
  9. Next, crank your oven up to broil and keep a close eye on your pizza while the top browns - it only takes a minute or two. Don't walk away! It can burn in just a few seconds.

Caramel Puff Apple Dumplings RECIPE FOR TODAY

Caramel Puff Apple Dumplings

Ingredients
Dumplings
1 sheet frozen puff pastry...
4 medium cooking apples ( Golden Delicious or Jonathan)
4 tablespoons brown sugar or 4 tablespoons Splenda brown sugar blend
2 tablespoons unsalted butter or 2 tablespoons margarine
1 teaspoon cinnamon
1 egg, lightly beaten
1 teaspoon water
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1/4 teaspoon lemon juice, for apples in case they start to turn brown
Sauce
1/2 cup prepared caramel ice cream topping
1/3 cup toasted chopped pecan halves
Cool Whip (optional)
vanilla ice cream (optional)


Directions
Dumplings:.
Preheat oven to 400°F.
Thaw and unfold puff pastry.
On lightly floured surface, roll the pastry into a 16" square.
Cut with a knife into 4 equal pieces.
Peel and core apples.
Trim the bottoms so the apples sit flat.
Place 1 apple in the center of each square.
Use 1/4 teaspoon of lemon juice if apples start to turn brown.
Mix together the brown sugar or brown-sugar splenda, butter or margarine and cinnamon.
Spoon into apples.
Beat the egg and water together in a small bowl.
Moisten the edge of the pastry with the mixture.
Bring the pastry up around the apple, pleating the pastry as needed to form a seal.
Place the dumplings in an un greased 9x13 inch baking dish.
Brush them with remaining egg mixture, sprinkle with granulated sugar or splenda.
Bake for 35 minutes until golden brown.
When ready to serve; heat the caramel sauce and the toasted pecans.
Place a warm dumpling on a serving plate and drizzle the sauce over the top.
Garnish with cool-whip or vanilla ice cream, if desired.

SLOW-COOKER RIBS RECIPE FOR TODAY

SLOW-COOKER RIBS
YIELD: 6 Servings
INGREDIENTS
4.5 lbs Farmland Pork Spareribs
2 18 oz Kraft Original Barbecue Sauce
4 tablespoons brown sugar
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
INSTRUCTIONS
In a bowl combine sugar, paprika, cayenne pepper, salt and pepper until well blended.
Rub mixture all over ribs. Place ribs standing up in a slow cooker, with the meaty side facing the walls of the crock pot.
Pour barbecue sauce over ribs. Turn on slow cooker and set at low for 6 hours.
Cover a wire rack with non-stick spray and set it over a baking sheet.
Carefully remove ribs and transfer them to the wire rack.
Pour sauce into a saucepan.
Cook over medium-high heat until reduced by half, about ten minutes.
Brush reduced sauce over ribs.
Transfer ribs to oven set on broil.
Cook for 2-3 minutes or until exterior of ribs are crisp.
