MUSHROOM AND ZUCCHINI WITH SPAGUETTI
Ingredients:
500 grams of spaghetti
500 grams of mushrooms, thinly sliced
2 zucchini, chopped
2/3 cup peas
2 cloves garlic, thinly sliced
2 sprigs thyme
Salt and pepper to taste
1/3 cup Parmesan cheese, grated
¼ cup whipping cream (optional)
INSTRUCTIONS
1. In a large pot on medium-high heat, combine the spaghetti, mushrooms, zucchini, peas, garlic, thyme and 4 ½ cups water. Season with salt and pepper to taste.
2. Bring to a boil, lower the temperature and simmer until the pasta is al dente and the liquid has evaporated (8 to 10 minutes).
3. Stir in Parmesan cheese and cream.
4. Serve immediately.
