Balsamic Chicken & Veggies RECIPE FOR TODAY

This recipe was doubled and can easily be cut in half for a smaller portion.

3 lbs of chicken cut in thin strips
4 TBS of olive oil divided
2 lbs of fresh green beans (tips removed and discarded)
1 pint of cherry tomatoes
1 large container of sliced mushrooms

4 TBS of Extra Virgin Olive Oil
Juice of 2 Lemons
4 cloves of minced garlic
2 tsp of Oregano
1/2 tsp sea salt
1/2 tsp ground black pepper
4 TBS Honey or Agave (I used Agave)
6 TBS Balsamic Vinegar

Heat 1 tsp of Olive Oil over medium heat and saute the green beans 4-5 minutes. Remove from pan.

Heat 1 tsp of Olive Oil and saute mushrooms for 4 minutes over medium heat and remove from pan.

Heat 2 TBS Olive Oil and saute chicken 3-4 minutes per side til cooked through. Remove from heat.

Whisk together the dressing ingredients and pour in pan. Heat over medium, bubbling til thickened slightly.

Add back the green beans, mushrooms and chicken and toss in the sauce and cook 2 minutes. Add the cherry tomatoes and cook another 1-2 minutes.
