Mango Carpaccio with Ice Cream RECIPE FOR TODAY

Fresh Mango Carpaccio with Ice Cream
Mango Carpaccio with Ice Cream 
Serves 4 : 
2 ripe mangoes 
Vanilla ice cream 
Mint leaves

1. Peel the mangoes. 

2. Using a mandoline or a very sharp knife, slices  the “cheeks” of the mango very thinly 

3. Arrange the mango slices on a plate 

4. Place a scoop of vanilla ice cream in the center — you can also use a fruit sorbet. 

5. Garnish with fresh mint leaves. Add some cherries for color.
