Chicken Meatballs RECIPE FOR TODAY

Chicken Meatballs

Serves 24
A mini meatball that has all the flavors of a buffalo chicken wing without the guilt.

Prep Time - 10 min
Cook Time - 30 min
Total Time - 40 min

1 lb extra lean ground chicken
2 oz reduced fat cream cheese
2 eggs
3 tbsp crumbled blue cheese
1/2 tsp black pepper
1/2 tsp celery salt
1/2 tsp garlic powder

4 oz butter
1/3 cup franks red hot sauce

1.Preheat oven 350
2.Line a rimmed baking sheet with parchment paper
3.In a medium bowl combine all the meatball ingredients together with your hands until just combined
4.Form into small meatballs, about 24, and place on the baking sheet
5.Bake for 10 minutes
6.While baking meatballs in the microwave melt butter with the hot sauce in a large microwave safe bowl, stirring every 30 seconds until melted and combined
7.After 10 minutes remove meatballs from the oven and liberally brush hot sauce over each meatball
8.Return meatballs to the oven and bake for an additional 20 minutes
9.Remove from the oven and serve immediately or keep warm
10.Serve with blue cheese dressing, ranch dressing, celery sticks or carrot sticks
