BELIZEAN MEAT PIES

Ingredients:
1/2 lb ground meat
1 small sweet pepper
1 small onion
1/2 tsp black pepper
1/2 tsp thyme
1 tblsp tomato sauce
1 tblsp cumin
1 tblsp lea and perrin
Method:
FOR MEAT
Combine meat with ingredients also add diced onion and green peppers.
Cook for about 20 minutes and let cool.
FOR THE PASTRY:
1 lb flour
2 tsp baking powder
1/2 tsp salt
1/4 lb shortening
Cold water
Method:
Combine flour and salt in to bowl.
Rub shortening lightly into flour.
Add baking powder and crumble until mixtures resemble fine bread crumbs.
Mix to form a stiff dough with cold water (do not knead)
Roll with the rolling pin and cut into small pieces.
Line muffin tins with dough and add meat and cover with round pieces of dough.
Use pastry crumpler to decorate each pie top.
Put in oven and bake for 15 to 20 minutes.
