Vegan Strawberry-Vanilla Chia Seed Pudding

This recipe makes four servings.
Ingredients:
2 tablespoons chia seeds chia seeds (do not pre-soak)
1/2 cup homemade almond milk
2 teaspoons pure vanilla extract
6 medium strawberries
Directions:
In a blender, blend the strawberries, almond milk and vanilla together.
Pour over the chia seeds and stir.
Let sit for about 2 minutes and stir again.
Cover the pudding and let it sit for another 20 to 23 minutes.
Once the pudding is thick, stir once more and serve immediately.
I don’t recommend letting this pudding sit in the refrigerator to chill. Instead, be sure your strawberries and almond milk is chilled in the refrigerator before you make this recipe.
