SWEET AND SOUR BEEF
Olive oil
2 beef steaks cut into strips or cubes
Salt and black pepper
½ small onion, sliced or cubed
1 clove garlic, minced
¼ of a green pepper, orange or red
1 whole Chile serrano
1 guaje tomato, diced
1 carrot, peeled and cut in strips
1 Zucchini cut into large cubes
1 medium potato cut into large cubes, optional
1 tbsp tomato puree
1-2 tablespoons ketchup
2 teaspoons soy sauce
1 teaspoon mustard
2 tablespoons rice vinegar or apple cider vinegar
1 teaspoon honey (to taste)
Grated fresh ginger to taste
½ cup water
Salt and black pepper
Preparation:
• Heat oil in 3-4 liters pressure cooker. When hot, add the meat, season with salt and pepper. Add the onion and garlic and stir and let it cook for half a minute. Add green chili, peppers, carrots, zucchini and potatoes. Stir to mix.
• Add the tomatoes, tomato paste, ketchup, mustard, vinegar, honey, grated ginger and stir. Season everything with salt and black pepper. Stir ti mix well.
• Add half cup of water. Cover and continue to cook five minutes from the time the pressure gauge goes up. Cool the cooker under running water and open it. Stir, try the stew and rectify the seasoning if necessary.
Serve with plain white rice.
