SALMON AND GUAVA SAUCE
Ingredients

4 salmon fillets, 6 to 8 oz each

1 tablespoon onion powder

Guava Sauce:
2 tablespoons of vegetable oil
4 garlic cloves, chopped
2 cups guava paste, cut into small pieces
1/2 cup orange juice
3 tablespoons water
2 tablespoons lime juice
1/4 teaspoon cumin powder
Salt and pepper to taste

Directions
Preheat the oven to 450°F.
Season salmon with onion powder, salt and pepper. Place salmon, skin side down, on a non-stick baking sheet.
Bake until salmon is cooked, about 12 to 15 minutes.
Meanwhile make the sauce: In a medium saucepan, warm the oil over low heat, add the garlic and cook until soft, but don’t let it get any color.
Add the rest of the sauce ingredients. Simmer about 10 minutes over low heat, stirring often. Pour the sauce over the salmon fillets. Garnish with fresh cilantro and serve immediately.
