Baked Egg Plant
Ingredients
1 Egg Plant
2 Beaten egg and a little milk
1 cup Panko Breadcrumbs or Italian Breadcrumbs
Olive Oil
Salt and pepper

1 cup Panko Breadcrumbs or Italian Breadcrumbs

Instructions
Peel, slice, and dip slices in beaten egg with a bit of milk, and coat on all sides in Panko (or Italian breadcrumbs that is seasoned with salt and pepper.
Heat oven at 425 F/ 220 C / Gas 7
Place coated slices in a baking pan with a layer of Olive Oil.
Bake until bottom is golden, then sprinkle tops with Olive oil, and turn over, and bake until golden again.
