ALFREDO CHICKEN WITH BROCCOLI
2 tablespoons chicken broth
2 teaspoons unsalted margarine
4 chicken breasts without skin or bone
1/2 cup reduced-fat cream
2/3 cup skim milk
3 teaspoons of mozzarella cheese
1 teaspoon grated Parmesan cheese
1 cup broccoli florets, steamed
In a hot skillet melt 1 tablespoon margarine.
Cook the chicken breasts in 1/2 teaspoon chicken broth.
Repeat for the other two breasts. Set aside.
In the same pan place the milk, cream, cheese and season with the remaining teaspoon chicken broth.
Let the cheese melt and mix all ingredients.
Add the chicken to the sauce, cook 2 minutes and serve decorating with warm broccoli.
