Cochinita Pibil ANOTHER RECIPE FOR TODAY


Cochinita Pibil
230 grams of pork
400 grams of annatto paste (Recado) dissolved in orange juice
8 bay leaves
4 cloves
4 cloves garlic
1 pinch of cumin
1 banana leaf

Preparation
Wash the banana leaf and warm on the comal to soften it. Cut the pork into medium pieces and marinate it for 8 hours in the achiote sauce (recado), adding all the spices.
Refrigerate.
Wrap the meat in the banana leaf and bake 40 to 60 minutes at a temperature of 180 degrees Celsius, with marinade included.
When serving, crumble the meat and bathe it with its own juice.

Mounting
Assemble the Cochinita Pibil in the banana leaf used for cooking and accompany with habanero pepper and purple onion.
