Beef N Avocado Taco RECIPE FOR TODAY

Beef N Avocado Taco

½ lb beef tenderloin cut into thin strips
¼ cup fresh squeezed lime juice
1 tablespoon of chili powder
1 tablespoon vegetable oil
1 medium sweet onion thinly sliced
1 red bell pepper thinly sliced
1 poblano pepper thinly sliced
½ tsp of salt
½ tsp of pepper
1 can of black beans
1 diced avocado
¼ cup of crumbled Cojita cheese
¼ cup cilantro
Corn tortillas
Combine beef, lime juice and chili powder in bowl and set aside.  
Heat the oil in a large skillet and add the onion, bell and poblano peppers and sauté for 5 minutes.  
Add the beef and marinade with the vegetables and cook 3 to 4 minutes.  
Add salt and pepper.  
In a separate bowl combine the black beans, avocado, cheese, lime juice and cilantro. 
 Top the beef and vegetables with cilantro, squeeze a lime over top and serve with the avocado salad and optional tortillas.
