Creole Style Tilapia
Ingredients:
½ cup brown rice
1 onion sliced thin
2 ribs of sliced celery
2 large carrots sliced
2 tilapia fillets (5-6 oz each)
1 cup canned diced tomatoes
2 tablespoons chopped fresh cilantro
Salt and pepper to taste
Directions:
Prepare the rice on the stove according to package directions. Coat a large skillet with cooking spray and over medium-high heat cook the onion, celery and carrots for 5 minutes or until they are tender. Add the tilapia and cook for 3 minutes. Flip the fish over and add the tomatoes and herbs. Season with salt and pepper to taste and simmer for 2 minutes until the fish flakes easily. Serve over rice and garnish with cilantro.
