BLUE BACON BRUSSELS SALAD
1 lb fresh Brussels sprouts, cleaned and quartered
1 tbsp olive oil
½ tsp kosher salt
¼ tsp ground black pepper
4 slices bacon, diced
¼ cup blue cheese, crumbled
Heat oven to 400 degrees.
Place quartered brussels sprouts on a baking sheet. Sprinkle with salt and pepper. Drizzle olive oil over brussels sprouts, toss to coat.
Spread bacon on one side of the pan.
Roast sprouts for 3-5 minutes, or until bacon is crisp.
Place roasted sprouts and bacon in a large serving bowl. Sprinkle in blue cheese and gently stir to combine
