ROASTED BRUSSEL SPROUTS WITH BACON, CRANBERRIES, APPLES AND WALNUTS

Roasted Brussel Sprouts pair beautifully with the sweetness from cranberries and candied walnuts and the saltiness from bacon!

INGREDIENTS
1 lb Brussel Sprouts, rinsed and trimmed
1 tablespoon olive oil or melted bacon fat
¼ teaspoon salt
¼ teaspoon fresh ground pepper
1 apple, thinly sliced
3 tablespoons dried cranberries
3 tablespoon candied walnuts, roughly chopped
2 slices bacon, crumbled
INSTRUCTIONS
Preheat oven to 450 degrees.
Cook your bacon in a skillet over medium heat until cooked through and crispy, about 10 minutes. Set aside.
Cut the stem off of your Brussel sprouts and then cut in half (through the stem).
Place sprouts on a baking sheet and drizzle with oil or bacon fat. Stir to evenly coat. Sprinkle with salt and pepper.
Arrange the sprouts so the cut side is down.
Roast for 10 minutes. Then flip the sprouts so cut side is up and roast another 10 minutes.
Remove from oven and let cool slightly. Season again with salt and pepper if needed.
Toss with bacon, cranberries, walnuts and apple and serve warm!
