Slow Cooker Chicken Fajitas

Prepare slow cooker chicken fajitas in your crockpot. Vibrant peppers add a burst of color to this flavorful dish, and fresh lime juice gives it an authentic Mexican flavor. This meal is seriously that good.
All you need are a couple pounds of chicken breasts, red, green and orange peppers, an onion, diced garlic, diced tomatoes, a spoonful of honey, and your favorite Mexican seasonings (cumin, paprika, and chili powder work well).
Top with sour cream, salsa, guacamole, and anything else that floats your boat when you serve your culinary creation to your hungry family.
2 lbs boneless skinless chicken breast halves
1 (14.5 oz) can petite diced tomatoes with green chilies
1 red, orange and green bell pepper, julienned
1 large yellow onion, halved and sliced
4 cloves garlic, minced
2 1/2 tsp chili powder
2 tsp ground cumin
1 tsp paprika
3/4 tsp ground coriander
1 tsp salt
3/4 tsp pepper
2 Tbsp fresh lime juice
1 Tbsp honey
For serving:
Flour tortillas, sour cream, cilantro, salsa, guacamole, monterrey jack or cheddar cheese
Cook Time: 6-8 Hours on Low
