Irresistible Detox Kale Salad

Ingredients
Salad:
2 large sweet potatoes, peeled and diced into 1 inch cubes
2 Tbsp. extra-virgin olive oil
1 tsp. honey
pinch ground cinnamon
sea salt and freshly ground pepper, to taste
1 head kale, stemmed and chopped
1 Tbsp. pomegranate arils
1 tsp. sesame seeds
Dressing:
2 Tbsp. extra-virgin olive oil
1 Tbsp. apple cider vinegar
1 Tbsp. balsamic vinegar
1 tsp. honey
1 tsp. Dijon mustard
pinch ground cinnamon
2 chives, thinly sliced
sea salt and freshly ground pepper, to taste
Instructions
Preheat oven to 375 degrees F.
Toss sweet potatoes with oil, honey, cinnamon, salt and pepper in a large bowl; transfer to a rimmed baking sheet.
Roast for 20-25 minutes or until tender and golden brown. Remove from oven.
Meanwhile, whisk dressing ingredients in a small bowl.
In a large serving bowl, combine sweet potatoes, kale, pomegranate arils and sesame seeds. Drizzle dressing on top; toss to coat and serve.
