Turkey Teriyaki Meatballs
makes about 15 meatballs
Ingredients
meatballs:
1 pound ground turkey
1 egg
1/2 cup bread crumbs
1 tsp worcestershire sauce
2 tsp salt
2 tsp pepper
green onion bunch, thinly sliced (3-4 tablespoons)
1 tsp dried oregano
Method:
Preheat oven to 350 degrees
Combine all ingredients in bowl and mix well with hands but be careful not to overwork the mixture
Form 1 inch balls and place in greased glass pan
Bake for 30 – 35 minutes until the temperature has reached 165 degrees
teriyaki sauce:
1/4 cup soy sauce
1/2 cup water
1 shallot, minced
2 cloves garlic, minced
1/2 tsp ground ginger
3 tbsp brown sugar
juice from 1 orange
1 tbsp honey
1/2 tsp red pepper flakes (optional)
1 tbsp corn starch
2 tbsp water
Method:
Combine soy sauce, first portion of water, shallot, garlic, brown sugar, orange juice, honey and red pepper flakes in sauce pan over medium heat
While mixture is heating, combine corn starch and water with your fingers to make a “slurry”. Use your hand so you can ensure to get rid of all the lumps
Add slurry to soy sauce mixture and continue to simmer the mixture over medium heat until it has reached your desired consistency. For the meatballs I like the sauce to be on the thick side, with a stir fry I like to be thinner. Enjoy!
